    Equipment

    • 1 Kamado Joe Grill
    • 1 JoeTisserie
    • 1 JoeTisserie Basket
    • Lump Charcoal
    • Apple wood chunks
    • Sheet Pan
    • Wire Rack That fits in the sheet pan.

    Ingredients

    • 3 lbs Chicken Wings Cut into Flaps and Drums
    • 4 tablespoon Wagyu Beef Fat Sprayable Kind
    • 4 tablespoon Black Pepper
    • 2 tablespoon Sea Salt
    • ¼ Cup Granulated Garlic
    • ¼ Cup Granulated Onion
    • ½ tablespoon MSG
    • 1 tablespoon Smoked Paprika

    Instructions

    • Cut your wings into flaps and drums. Dry them off as much as possible with paper towels. Place them on a wire rack that is placed in a sheet pan.
    • Mix all of the dry spices in a shaker and season the wings liberally on both sides. Put the wings uncovered in a refrigerator overnight if possible. If not just place them in the refrigerator while you are setting up your grill.
    • Install the JoeTisserie on your grill and load the Kamado with ½ basket of charcoal and light it. IF you have the ability in your grill place down the X accessory and put ½ heat deflector on it. Leave the top and bottom vents totally open. Close the lid and let the grill preheat for 15-25 minutes.
    • Once your grill is preheated set your top vent to the first dash and the bottom vent to 1 finger. This should result in a 350F(177C)-400F(204C) temp. Let the grill stabilize at those setting for 15-25 minutes.
    • Once the temp has stabilized grab your wings out of the fridge and spray them with the wagyu beef fat .Add them to the JoeTisserie basket and put it in the grill. Close the lid and cook for 45 minutes to an hour watching that your temps don't go over 450F(232C). After the one hour the wings should be fully cooked.
    • Let the wings rest for about 10 minutes so they are not too hot to eat and ENJOY!
