BACK TO INSTANT POT BASICS
Our family eats a good deal of rice. My wife is Filipino, and they eat rice with just about everything, so we needed a good rice cooker. That is actually why I got the Instant Pot. Our old rice cooker took like an hour to make rice and the pot was non-stick and beginning to flake off.
The idea of a stainless-steel pot and no chance of us eating non-stick coating was a big selling point. The fact that it could do all the other things was honestly just a bonus. Now I use this thing at least 4-5 times a week just cooking rice in the Instant Pot.
We prefer Jasmine rice and it comes out great in the instant pot. If you prefer another kind of rice we also use basmati rice sometimes and it comes out great in the Instant Pot. Below is my recipe for 2 cups of rice in the instant pot and my Top 3 Tips.
Tip Number 1: Have a Dedicated Silicone Ring For Rice Only!
Believe it or not the Sealing Ring in the instant pot absorbs the smell of what you cook in it. The stronger the item you are cooking smells, the more that smell will stick in the ring. Think of curry or chili and how strong they smell.
Even using proper cleaning techniques and running your Sealing Rings through the dishwasher never really gets rid of the smells totally.
Guess what? That smell from your previous cooks will transfer into your rice. Buying an additional Sealing Ring and only using it for cooking rice in the Instant Pot will help you avoid beefy rice. I go into this in further detail in my Top 5 instant pot tips and hacks.
Tip number 2: Add a little extra water for better rice.
The basic instructions for making rice in the Instant Pot are to measure your rice out using the provided cup and then add an equal amount of water using the same cup. Meaning if you were making 2 cups of rice in the instant pot than you would use 2 cups of rice and 2 cups of water, or a 1 to 1 ratio. For us this produces white rice a little bit too much on the dry side. So my tip is not to use a 1/1 ratio of water to rice.
In my 2 Cup Recipe I add an extra ¼ cup of water. So, to make 2 cups of white rice you would add 2 cups of dry jasmine rice and 2 ¼ cups of water. This makes wonderful semi-sticky rice. An added bonus of the extra water is you get a little bit of extra leeway if you leave your rice in the Instant Pot on warm a little too long as it does not dry out as much if you did not add the extra water.
I have tested it and as you add more rice there is actually no need to add extra water past the ¼ cup. I don't understand why it works but it does. So even if you are making 4 cups of rice, just add the ¼ extra water not ½ cup. The trick is to just have a little extra water than the 1/1 ratio.
Tip number 3: Rinse Your Rice 3 Times!
Why rinse rice? You cook it in water so isn't that just an extra step? So many people skip the rice rinsing all together or only rinse once. I know it may seem like a waste of time but it makes a huge difference.
When you rinse rice you are removing the excess surface starch. This starch is what causes your rice to stick together and become a clumpy mess. It is really easy and only takes about a minute to rinse your rice properly and cook rice in the Instant Pot.
How to Rinse Rice Properly for the Instant Pot:
Rinse your rice 3 times, that is what I was told by an old Asian grandma, and I listen to grandmas (they cook the best food). You don't need a strainer or anything else other than the inner pot of your Instant Pot.
Put your rice in the inner pot and cover it with water. Now swirl the water and rice around the pot in a circular motion. I show this really well in the video so give it a watch if you need to. After it has swirled around carefully tip the pot to the side and pour out the water.
The rice will stick to itself and stay at the back of the pot as long as you go slow. Wait until the water has just about stopped running out. Repeat this process 2 more times and water will be much clearer than when you started.
Now you are ready to make the best rice ever in your instant pot using my recipe.
Did you leave your rice in the instant pot too long?
There is nothing worse than trying to scrape off razor sharp rice that has fused itself to the inside of your instant pot inner pot. Don't worry, Dad has a hack for that.
