    Sous Vide & Air Fried Beef Short Ribs

    Dad's Sous Vide and Air Fried Short ribs are a thing of beauty. They are tender, yet still have a bite to them. Dad did not want them to have a "pot roast" texture to them.

    Tender is great, too tender is not in Dad's opinion. Dad is not a fan of "fall of the bone" ribs. Dad likes his ribs to still have a little "chew" to them.

    Dad Wants His Ribs to Have a Little Chew

    Ribs should still stick to the bone a little when you bite them for Dad to be happy.  Short ribs are no exception to this rule. Dad wanted to make the huge "dinosaur" style ribs he sees everyone do.

    Unfortunately his butcher did not have that cut. They only do the "chunked" ones. There is no difference in the cooking method or taste, the big ones just look COOL!

    Dad figures he will ask them to cut some for him, or not cut, next time.


    Sous Vide Makes it Easy

    These sous vide recipes make things really easy. All you really need to do is throw some basic seasoning on the short ribs. Dad likes garlic powder, onion powder and sea salt. Seal them in a vacuum bag and let them chill in the water bath. The magic of sous vide does all the heavy lifting.

    Dad is convinced that even a bad cook could make an AMAZING meal with the help of sous vide. Throw and air fryer in the mix and they become dangerous.

    Dad likes to double bag his ribs, anything with bones actually. This helps prevent the bag from bursting.


    134 degrees for 12 hours

    Now it is time to cook the ribs. Once you have your immersion circulator set up put your rubs in the water bath and let them cook for 12 hours at 134 degrees. This will give you a nice medium-rare. This will also allow some room to air fry them and not overcook them.

    You Need to Crisp them, Why not Try the Air Fryer?

    There are lots of ways you can add a crust to your short ribs after you sous vide them. You can use a torch, grill them or broil them to name a few. Dad figured the Air Fryer is like a turbo broiler so why not give it a try.

    Once you remove the ribs from the vacuum bag and dry them off with a paper towel you can put them in your air fryer. Dad recommends spraying them with a little oil, use a spritzer. This will help them crisp up.

    350 degrees for 10 minutes

    After the ribs have cooked for 10 minutes you can use any glaze you like. Dad has one in the recipe below. Glaze the ribs and then cook them for another 5 minutes on the highest setting your air fryer will go to. Once everything was done Dad has to say it worked pretty well. Yes, it cooked the ribs a little past the temp they came out at, but you just account for that and all is good.


    The final result

    As you can see there is still almost no grey band of overcooked meat on the outside of these. I would say the Air Fryer is a great option for crusting up a sous video cook.

    Sous Video & Air Fried Short Ribs!

    These 24 hour sous vide short ribs get crisped up in the air fryer to give them that perfect crust.

    Equipment

    • Instant Pot - Electric Pressure Cooker
    • Air Fryer
    • Vacuum Sealer
    • Vacuum Sealer & Bags
    • Pot or polycarbonate Container

    Ingredients

    For the Ribs

    • 2 lbs Beef Short Ribs on the Bone
    • 1 tablespoon Garlic Powder
    • 1 tablespoon Onion Powder
    • 1 tablespoon Sea Salt

    Optional Rib Glaze

    • ¼ cup Honey
    • ¼ cup Soy Sauce
    • 1 teaspoon Ground Ginger
    • 1 teaspoon Vegetable Oil

    Instructions

    Sous Vide Cook

    • Season the ribs liberally with garlic powder, onion powder and sea salt.
    • Seal the ribs in a vacuum bag. Dad likes to double bag these due to the bones so that there is no chance of breaking the bag.
    • Set up your sous vide cooker according the the manufacturers directions.
    • Set the cooker to 134 degrees and wait for the water to come up to temp. You can do 131 if you would like the ribs more to the rare side of medium rare.
    • When the water reaches 134 degrees submerge the sealed ribs in the water bath. Place an item on top if you wish to prevent floating. If you want you can use ping pong balls like dad to prevent evaporation. If not make sure you check your water level mid cook so that the ribs do not become uncovered.
    • After 24 hours remove the bag of ribs from the water bath.
    • Remove the ribs from the bag and dry them thoroughly.

    Air Fryer Cook

    • Set up your air fryer according the manufacturers directions.
    • Place the ribs in the air fryer and coat with vegetable oil. A sprayer works best.
    • Cook at 360 degrees for 10 minute. Your time and temp may vary depending on your air fryer. You are just looking for a nice browned color.

    Optional Glaze (You can use any BBQ sauce you like)

    • Mix ¼ cup of honey, ¼ cup of soy sauce and 1 teaspoon of ground ginger in a bowl.
    • Coat the ribs with glaze.
    • Cook for an additional 5 minutes until the glaze gets nice and browned.
    • Once desired color is achieved remove and serve immediately. No need to let them rest.
