    Ca Phe Sua Da using an Aeropress

    Ca Phe Sua Da is a Vietnamese Iced Coffee that Dad got addicted to in his youth. It is basically espresso mixed with sweetened condensed milk and is DELICIOUS.

    Traditionally you use a special drip-style coffee maker and the coffee slowly drips through taking a very LONG time.

    Dad is an impatient man, so he came up with a version using one of his favorite kitchen gadgets. The AeroPress is an ingenious little contraption used to make coffee.

    It is a plunger style thingamabob and you can use it to make a pretty close to espresso. Real espresso machines are a lot of money and the cheap ones are not that great.

    To make "espresso" using an Aeropress is pretty easy but you kind of have to be precise and follow the recipe so you will need a digital kitchen scale. If you do you get a nice shot of coffee with a nice crema on top.


    Step 1 - Grind your coffee

    Use and espresso roast coffee if you can, if not at least use a dark roast coffee. Grind it to a very fine texture, think of white sugar. The authentic recipe uses Cafe Du Monde Coffee.  This is what all the Vietnamese restaurants use for there Ca Phe Sua Da. However,  this is really formulated to work best in that drip style unit they use. Dad has not tried this with that coffee.


    Step 2 - Load the Aeropress

    Put the plunger in the main body of the AeroPress and then turn it upside-down on top of a digital kitchen scale. Turn on your scale, set it to grams, and zero it out. Add in 20G of the coffee.


    Step 3 - Boil Water

    Bring some water up to a boil and then take it off the burner. If you are really nerdy you are looking for 195-degree water. Put it in a container that you can pour easily. Dad just boils the water and then takes it off the burner to transfer to his little carafe for pouring. This gives him a good temp of the water.


    Step 4 - Pour slowly

    Reset your digital scale to 0. Now pour in 50g of the hot water. Pour slowly, it should take about 10 seconds or longer. This helps with the temp and steeping process.


    Step 5 - Agitate

    You now need to carefully swirl the coffee in the Aeropress for about 30 seconds. This helps mix and steep the coffee for the Ca Phe Sua Da.


    Step 6 - Plunge like hell

    Now place a paper filter in the cap of the AeroPress and secure it to the top of the body. Place a cup on a stable surface. Dad uses a hard plastic cup for safety. You will be applying A LOT of pressure so using glass could be dangerous if it decided to break. Flip the Aeropress on top of the cup and push the plunger down with all your might. Go slowly as it will help the coffee extract as much as possible. When you think its done push a little more and then let it sit and drip for a few seconds.


    Step 7 - Repeat the process

    For some reason Dad has not had much luck trying to double the recipe for a double shot. You don't seem to get the same results quality-wise. So just empty and reload and go again! You need at least two shots for this recipe.


    Step 8 - Ice and mix

    Fill a tall glass ¾ of the way with ice and pour two tablespoons of sweetened condensed over the ice. Now pour your 2 shots of espresso over the ice and sweetened condensed milk. Stir it up and let the ice melt a little bit. Sip and enjoy it! Dad likes a tall glass of this so he uses 4 shots and 3-4 tablespoon of the condensed milk to make a really big glass. You can adjust how much of the condensed milk you use to make it as sweet as you like. Some people like more and some like less.

    Ca Phe Sua Da is Vietnamese Iced Coffee and totally delicious. It is basically strong espresso mixed with sweetened condensed milk and ice. It is a sweet coffee treat for sure. Dad makes his espresso using an Aerproess.

    • 40 G Finely ground coffee
    • 2 tablespoon Sweetened condensed milk
    • 100 G Boiled water
    • Ice

    • Bring some water up to a boil and then take it off the burner. Put it in a container that you can pour easily.
    • Reset your digital scale to 0. Now pour in 50g of the hot water. Pour slowly, it should take about 10 seconds or longer. This helps with the temp and steeping process.
    • You now need to carefully swirl the coffee in the Aeropress for about 30 seconds. This helps mix and steep the coffee.
    • Now place a paper filter in the cap of the Aeropress and secure it to the top of the body. Place a cup on a stable surface. Dad uses a hard plastic cup for safety. You will be applying A LOT of pressure so using glass could be dangerous if it decided to break. Flip the Aeropress on top of the cup and push the plunger down with all your might. Go slowly as it will help the coffee extract as much as possible. When you think its done push a little more and then let it sit and drip for a few seconds.
    • Empty, reload and go again! You need at least two shots for this recipe.
