    Ingredients

    For the Picanha Pinwheel

    • 3.5 LBS Whole Picanha Roast
    • 2 tablespoon Kosher salt ESTIMATED
    • 1 tablespoon Black Pepper ESTIMATED
    • 2 tablespoon Dad Dust Seasoning ESTIMATED (50% granulated garlic, 50% granulated onion, splash of MSG)
    • 1 tablespoon Wagyu Beef Tallow Spray ESTIMATED

    For the Garlic Herb Butter

    • 1 CUP Unsalted Butter softened
    • 2 tablespoon Fresh Rosemary
    • 2 tablespoon Fresh Sage
    • 1 tablespoon Fresh Thyme
    • 2 tablespoon Garlic MINCED
    • 1 teaspoon Salt TO TASTE

    For the Potatoes

    • 3 LBS Potatoes chopped
    • 3 tablespoon Olive oil or garlic infused olive oil
    • 1 TBSP Salt To Taste

    Instructions

    Prepare the Picanha

    • Trim the fat cap slightly to make it more manageable, leaving some fat for flavor. Butterfly the picanha open like a book without cutting all the way through. Season the inside generously with kosher salt on both sides and set aside while you prepare the butter.

    Make the Garlic Herb Butter

    • Soften the butter. Finely chop rosemary, sage, thyme, and garlic. Mix the herbs and garlic into the butter and season with salt.

    Build the Pinwheel

    • Spread a generous layer of garlic herb butter over the inside of the picanha. Season with black pepper and Dad Dust. Roll the meat tightly into a pinwheel and secure with butcher’s twine. Season the outside lightly with Dad Dust and spray with Wagyu beef tallow.

    Cook in the Typhur Sync Air Fryer

    • Insert the Typhur wireless probe into the center of the roast. Place the pinwheel in the Typhur Sync Air Fryer on its side so the probe fits without touching the top. Set the air fryer to 250°F (121°C)Cook until the internal temperature reaches 118°F (48°C) to allow room for a final high heat sear.

    Sear and Rest

    • Take the roast out and increase the heat to 450°F (204°C) to create a hot sear and build exterior crust. Let the air fryer preheat for a good 5 minutes before searing. Once finished, remove the roast and rest for 15 to 20 minutes before slicing into pinwheels.

    Air Fry the Potatoes

    • While the beef rests, toss chopped potatoes with olive oil and salt. Air fry at 400°F (204°C) until tender and crispy, about 20 minutes, shaking halfway through.

    Slice and Serve

    • Remove the twine, slice into pinwheels, and serve with the air fryer potatoes.
