The Magic of Mexican Street Corn
Mexican Street Corn, or elote, is a beloved street food that combines simple ingredients to create a complex flavor profile. Traditionally, it starts with grilled or roasted corn on the cob, generously coated with a mixture of creamy mayonnaise and tangy Mexican crema. This creamy base serves as the canvas for a delightful medley of flavors: crumbled cotija cheese for its salty bite, a sprinkle of chili powder or cayenne for a hint of heat, and a squeeze of fresh lime juice to brighten it all up. The result? A mouthwatering treat that's as satisfying as it is irresistible.

Tips for Perfect Grilled Corn
Grilling corn on the Ninja Woodfire Grill is straightforward but here are a few tips to ensure your Mexican Street Corn turns out perfectly every time:
- Husk and Silk Removal: Start by removing the husks and silk from the corn. A handy trick is to use a rubber kitchen glove to remove any stubborn silk—it grips better than your fingers!
- Prep Your Grill: Set your Ninja Woodfire Grill to the air crisp or air fry setting at around 350 degrees Fahrenheit. This setting helps achieve that perfect char and ensures even cooking.
- Adding Smoky Flavor: Enhance the flavor of your corn by adding wood pellets to the grill. Kona premium blend wood pellets are recommended for their mild flavor that pairs well with grilled corn.
- Grilling Time: Grill the corn for about 12-15 minutes, turning occasionally to ensure even cooking. Aim for a slightly charred exterior while keeping the kernels tender and juicy inside.
- Toppings Galore: Once grilled to perfection, slather the corn with the creamy mayo and Mexican crema mixture. Sprinkle generously with crumbled cotija cheese, chili powder or cayenne for heat, and a squeeze of fresh lime juice for that citrusy zing.
