Ingredients

  • 5 Ears of Corn
  • 3 tablespoon Mexican Crema
  • 3 tablespoon Mayonaise
  • ¾ Cup Cojita Cheese
  • 1 tablespoon Tajin
  • 1 Lime
  • ¼ Cup Fresh Chopped Cilantro
  • ¼ Cup Melted Butter

Instructions

  • Remove the husk off the corn and clean it off and coat the corn with the melted butter.
  • Add your pellets to your Ninja Woodfire and set it to Aircrisp, 12 minutes, and 350°F or 177°C. Make sure you turn on the WOODFIRE button to get SMOKE! Place the elevated rack on top of the grill grate.
  • When the unit says to add food put your corn on top of the elevated grate.
  • Cook for 6 minutes then Flip, brush with more melted butter and cook for the remaining 6 Minutes and remove it from the WOODFIRE.
  • Mix the Mayonnaise and Mexican Crema together. Spread a thin layer over the corn. Sprinkle generously with the Cojita cheese and dust with Tajin if desired.
  • Garnish with chopped cilantro and serve with a lime wedge for squeezing on top.
