Double Cut Pork Chop with Mushroom Gravy

Ingredients

Pork Chops:

  • 1.3 lb Double Cut Pork Chop
  • Dad Dust see note for recipe
  • Sea Salt to taste
  • Black Pepper to taste
  • Avocado Oil

Mushroom Gravy:

  • 16 oz Mushrooms
  • 2 tablespoon Avocado Oil
  • 2 tablespoon Sea Salt Estimate
  • 2 tablespoon Black Pepper Estimate
  • 2 tablespoon Dad Dust Estimate (See Note for Recipe)
  • 1 tablespoon Herb DeProvance Estimate
  • 3 tablespoon Unsalted Butter
  • 3 tablespoon All Purpose Flour
  • 2 Cups Beef Broth
  • 2 tablespoon Worcestershire Sauce
  • 2 tablespoon Mustard

Instructions

  • Season the chop with Dad dust, Sea Salt and black pepper. Let it sit out at room temp while you cook your mushrooms.
  • Make the Mushrrooms:
 Set the Dome 2 to Air Fryer 400F and let it preheat for 5 minutes. Toss the mushrooms in avocado oil and all of the spices. When the Dome 2 is preheated cook the mushrooms for 10 minutes and then give them a shake. Cook for an additional 10 minutes or until fully browned. Remove from the Dome 2 and set aside.
  • Cook the Chop:
 Remove the Grate accessory from the Dome 2. Insert your Typhur Gold Sync probe into the chop. Pour a little bit of avocado oil in the chop and then place the chop down. Cook on Air fry at 400F until the probe reads 145F and let it rest for 10 minutes if you want medium well. If you want medium rare cook to 125F and it will hit 145F after resting.
  • Make the Gravy: While the chop is cooking set a pan over medium heat and add in 3 tablespoon of Butter. Let it melt and begin to bubble. Add 3TBSP of flour and whisk well. Cook that for about 5 minutes, and then add in 2 cups of a good beef broth. Whisk until thoroughly combined, and simmer it for another 5 minutes. Now add in 2 tablespoons of Worcestershire sauce. Whisk and simmer for 1-2 minutes. Lastly add in 1 tablespoon of honey mustard and whisk until combined. Simmer on low for 10 minutes.
  • Slice and serve with the mushroom gravy.
