    Equipment

    • 1 Grill

    Ingredients

    • 5 LB Boneless Skinless Chicken Thighs From Wildforkfoods
    • ¼ Cup Smoky Pecan BBQ Rub From Wildforkfoods
    • ½ Cup Memphis BBQ Sauce From Wildforkfoods

    Instructions

    • Season: Liberally coat the thighs with the smoky pecan rub. Let it sit to marinate while you set up your grill.
    • Setup Your Grill: Set a grill up for 2 zone cooking with one hot side and one cool side.
    • Grill: When your grill is preheated grill the thighs on the hot side letting them build up a nice char. Halfway through the cook be sure to add extra Smoky Pecan rub to enhance the flavor. Once the thighs have a nice char on them check them for temp. You want them to be at least 165F(74C) and you can go all the way up to 195F(91C) if you like them that way.
    • Rest: Cover the thighs with the Memphis BBQ sauce and then let the thighs rest for at least 5 minutes, 10 minutes is probably the sweet spot. You can pre chop them or serve them whole, it is all up to you!

Part of the magic behind Smoky Pecan Chicken Thighs is how versatile they are. Whether you are cooking for a crowd at an outdoor event or just grilling in your backyard, this recipe doesn't require any complicated techniques or expensive tools. The core of it starts with Wild Fork's boneless skinless chicken thighs and their Smoky Pecan Rub. That combination is the foundation of the flavor, and it works every single time. The rub is rich and full without being overly salty, making it ideal for coating generously on both sides of the chicken. When that seasoning meets the heat of the grill, the aroma alone is enough to draw a crowd.

Cooking these chicken thighs is also about understanding the grill. At the live events, I set up for two-zone cooking with a hot side for searing and a cooler side for finishing. This method allows me to control the cook perfectly while avoiding flare-ups or burnt spots. It's a simple tip that works on gas, charcoal, or electric grills. The result is juicy, evenly cooked chicken with that perfect crust everyone loves. That crust is where the Smoky Pecan Rub really shines, locking in flavor and giving each bite a satisfying texture.

One reason people come back for these again and again is that they deliver on flavor without being heavy or overly spicy. They're sweet, smoky, and savory with no overwhelming heat, making them a hit for kids and adults alike. At Wild Fork events, I often serve them chopped up and covered in Memphis BBQ sauce for an extra layer of flavor, but they're equally delicious straight from the grill without sauce. In fact, tasting them plain really lets you appreciate what the Smoky Pecan Rub brings to the table.

Another highlight of this recipe is its efficiency. A big bag of chicken thighs from Wild Fork is both budget-friendly and practical, allowing you to feed a crowd without breaking the bank. Since the seasoning and sauces can be used multiple times, this is a meal that offers a lot of bang for your buck. Whether you make a small batch or fill the grill, the process remains just as simple. The straightforward steps mean even someone new to grilling can get great results, and the feedback from guests is almost always the same-people want more.

When it comes to the actual cooking, the little tips make a big difference. Giving the chicken enough time on each side before flipping helps develop that deep, golden crust. Avoiding the temptation to move them too soon prevents sticking and allows the Maillard reaction to work its magic. And seasoning twice-both before and during cooking-ensures the flavor stays bold all the way through. Watching the color develop and smelling the smoky pecan aroma in the air is part of the fun.

Even though the seasoning is the star, proper temperature control is essential. Using an instant-read thermometer takes out the guesswork and guarantees that the chicken reaches the perfect doneness. Letting the meat rest before serving ensures every bite stays juicy. These are small steps, but they make the eating experience so much better.

For anyone who wants to experience these chicken thighs without firing up the grill, coming to a Wild Fork live event is the way to go. The energy, the smell of the food cooking, and the chance to taste these right off the grill is something special. It's why this recipe continues to be a fan favorite every time. But if you do make them at home, you'll find they're one of those rare dishes that's both event-worthy and weeknight-friendly.

Smoky Pecan Chicken Thighs are proof that you don't need a long ingredient list or complex steps to create something unforgettable. The combination of quality chicken, the unique seasoning blend, and the right grilling method turns a simple recipe into something people will talk about long after the plates are empty. Whether served plain or sauced, they're a guaranteed win at the dinner table or the backyard barbecue.
