Dad's Instant Pot egg bites recipe is a take on the Starbucks sous vide egg bites that have become quite popular. Instead of sous vide, Dad uses the instant pot to make these egg bites super simple.
It always seems like Dad is in a hurry when it comes to breakfast. Having something you can pop in the microwave for 30 seconds and be ready to go is perfect for him.

Sous vide egg bites without the sous vide
Dad loves the sous vide egg bites at star bucks, specifically the bacon and gruyere ones. They are fantastic! Dad's Instant Pot egg bites recipe is as easy as it gets.
In fact this is more of a guide than a recipe. You can use any cheese you like, Dad used mozzarella in these. You don't have to use basil, you can use any herbs you like.
If you are not a fan of spam you can add any meat or veggie you like, just stick with ½ cup of it or it will get overloaded.
What do you need to make instant pot egg bites?
The first thing you need is an instant pot or electric pressure cooker. If you do not have one of those Dad will wait here until you do.
Ok, now that you have that you need a silicone egg bites mold. It is not 100% necessary, but a trivet with handles is SUPER HANDY.
It makes getting the molds in and out of the instant pot easy. This set is perfect! It has 2 egg molds and a trivet with handles. It is only $19.99 on Amazon and ships free with prime.
How to make instant pot egg bites
Step1: Blend all of the ingredients except the Spam.
Step 2: Mix your cooked spam (or any other cooked meat you want to use) into the blended mixture and pour it into your silicone egg mold.
Step 3: Wrap the egg mold with foil, or use the lid that came with the egg mold if it is silicone. If it is not silicone do not use it. Pour 1 cup of water into the instant pot (use 2 if you have an 8 qt).
Place your egg mold on top of your trivet if it has handles and lower it into the instant pot. If your trivet does not have handles you can make a sling out of foil. Dad Shows you how in the video.
Close the lid and cook on manual for 8 minutes. Allow for a 10-minute natural release and then remove the egg mold.
Step 4: Remove the foil or lid and then run a spoon around the edges of the egg bites to release them from the mold. You can eat them immediately or store them in the fridge or freezer for later!
Experiment with your egg bites
You can even swap out the ½ cup of heavy cream for cream cheese, cottage cheese or even sour cream. Each one will give you a different flavor and texture to your egg bites.
The possibilities are really endless. One thing that is not endless is the time these will last around the house. These things MOVE at Dad's house.
They are so easy to pop in the microwave and eat for a fast and hearty breakfast. Like Dad said, think of this as guidelines more than a recipe for instant pot egg bites.
