Dad has had to cook with what he has on hand these days. As Dad was rummaging through the pantry he noticed he had quite a few cans of San Marzano tomatoes.
Wanting to do something different than his Instant Pot Italian Sunday Sauce he came up with this dish, a tomato braised chicken served over some pasta. This is as easy as it gets.
You don't have to saute anything before you cook, just dump all the ingredients in the pot and give them a little stir then cook!
Take it up a notch
When the chicken came out Dad decided he wanted to add some color and texture to the chicken so he pulled out his new air fryer attachment and some parmesan cheese.
When it was all done it reminded him of the POLLO ALA PIRANDELLO that the had at the Epcot Festival of the Arts so he decided to serve it over a little bit of ricotta. Dad is going to revise this recipe and try and get it closer to that one in the future, but this is a delicious start!
Instant Pot & Air Fried Italian Style Chicken
Equipment
- Instant Pot or Electric Pressure Cooker
- Air Fryer
Ingredients
- 1 Whole Chicken Cut Up Into Pieces
- 1 Can San Marzano Tomatoes (28oz)
- 1 Cup Chicken Stock
- 1 tablespoon Minced Garlic
- 1 tablespoon Garlic Powder
- 1 tablespoon Onion Powder
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Oregano
- 1 tablespoon Sea Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Vegetable Oil
- 3 tablespoon Parmesan Cheese
- ½ Lb Ricotta Cheese
- 4 tablespoon Cooked Pasta
Instructions
- Put all of the chicken in the instant pot and season it with the garlic powder, Onion Powder, Basil, Oregano, Sea Salt & Black Pepper. There are no measurements, just dust it so it has a nice coating all over the chicken.
- Add the can of San Marzano Tomatoes, chicken broth & minced garlic. Add 1 teaspoon basil, 1 teaspoon Oregano, 1 teaspoon black pepper and 1 tablespoon sea salt & stir.
- Put the lid on the instant pot and cook on manual for 10 minutes & do a 10 minute natural release.
- Remove the chicken and set it aside. Pour the liquid into a separate bowl.
- Place the chicken in your air fryer skin side up and spray it with the vegetable oil. Sprinkle parmesan cheese over the chicken and air fry it for 5 minutes at 400 or until golden brown.
- Serve over pasta with ricotta cheese if you like!
