Instant Pot & Air Fried Italian Style Chicken

This is a recipe Dad threw together with what he had on hand! Dad is calling it "Apocalypse Chicken". The chicken is basically braised in the tomatoes using the instant pot and then removed and coated in parmesan cheese before a quick spin in the air fryer.

Equipment

  • Instant Pot or Electric Pressure Cooker
  • Air Fryer

Ingredients

  • 1 Whole Chicken Cut Up Into Pieces
  • 1 Can San Marzano Tomatoes (28oz)
  • 1 Cup Chicken Stock
  • 1 tablespoon Minced Garlic
  • 1 tablespoon Garlic Powder 
  • 1 tablespoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 tablespoon Sea Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Vegetable Oil
  • 3 tablespoon Parmesan Cheese
  • ½ Lb Ricotta Cheese
  • 4 tablespoon Cooked Pasta

Instructions

  • Put all of the chicken in the instant pot and season it with the garlic powder, Onion Powder, Basil, Oregano, Sea Salt & Black Pepper. There are no measurements, just dust it so it has a nice coating all over the chicken.
  • Add the can of San Marzano Tomatoes, chicken broth & minced garlic. Add 1 teaspoon basil, 1 teaspoon Oregano, 1 teaspoon black pepper and 1 tablespoon sea salt & stir. 
  • Put the lid on the instant pot and cook on manual for 10 minutes & do a 10 minute natural release.
  • Remove the chicken and set it aside. Pour the liquid into a separate bowl.
  • Place the chicken in your air fryer skin side up and spray it with the vegetable oil. Sprinkle parmesan cheese over the chicken and air fry it for 5 minutes at 400 or until golden brown.
  • Serve over pasta with ricotta cheese if you like!
