Here is the trick; Ditch the butter and use oil on your pan/griddle!
This is the most important thing you will learn here about making french toast. Stop using butter in your pan and use vegetable oil. You will thank Dad. You need to get your pan hot, a hot pan will get you a better crust. Unfortunately, butter breaks down under high heat and burns.
Butter turns brown and little bits start to form too quickly to be able to get that nice crust you want. If you lower the heat so the butter doesn't burn it will takes way too long to cook and you still won't get that crust. This is how you end up with soggy french toast.
By using good old fashioned vegetable oil you can get your cooking surface hotter and cook faster without the worry of burning.

Speaking of the cooking surface, Dad recommends you pick up an Electric Griddle like the one he used in the video. There are a few benefits to using an Electric Griddle when cooking your french toast.
The first benefit is the shear amount of cooking space you have, there is so much room for activities. This gives you the space to be able to flip the bread to a new section instead of right back where it was.
Why is flipping the bread to a new section of the cooking surface important? When you are cooking something in a pan or a griddle the item you put on the surface lowers the temperature of the cooking surface. If you flip the french toast in place the cooking surface won't be as hot as it was the first time you put it down. This results in one side that is beautifully browned and the other not so much. By flipping to a new section of the cooking surface you get the same heat as the first time.
Finally, with an Electric Griddle you get much more precise control of the heat. More control means better and more repeatable results. All kinds of things can affect how hot you need to cook your french toast, the thickness of the bread, the consistency of the egg mixture even the elevation and humidity can affect it (getting really geeky there).
The point is Dad might cook his at 400 but for you or it could be 375 to get your french toast perfectly browned and cooked. You want to be able to set that and replicate that again.
One last thing, egg to liquid ratio.
Aside from using oil instead of butter, the next most important thing when trying to achieve a instagram worthy french toast is the egg to liquid ratio. If you have too little liquid in the mixture you end up with an omelet on bread, not french toast.
If you have too much liquid you loose that eggy flavor you need. Dad uses 2 eggs to ⅓ a cup of liquid in his recipe. Speaking of the liquid, Dad highly recommends using heavy cream like he does. Milk will also work, it just won't be as good.

How to Make French Toast
Equipment
- Electric Griddle
Ingredients
- 4 slices Bread
- 2 Eggs
- ⅓ cup Heavy Cream
- 1 teaspoon Vanilla
- 1 teaspoon Cinnamon
- 4 tablespoon Vegetable Oil Estimate
Instructions
- Preheat Electric Griddle to 390 Degrees. If you don't have an electric griddle you can put a non stick pan over medium high heat.
- Crack eggs in a mixing bowl.
- Add Heavy Cream
- Add Vanilla
- Add Cinnamon
- Mix well with a whisk.
- Dip your bread in the mixture and flip. Make sure the bread it totally coated.
- Add vegetable oil to your griddle or pan.
- Place your bread on the cooking surface and allow to cook for 2-3 minutes. Flipping early is better than late because you can always flip it back to get it more browned. You can't go back it you burn it.
- Once the french toast has a nice golden brown crust on it serve immediately or move it over to a wire cooling rack if you are not serving right away. When you are ready to serve you can give them a quick reheat on the griddle or pan. This avoids soggy french toast.
