Equipment

  • 1 Ninja Woodfire Grill Any other smoker will do.
  • 1 Ninja Woodfire Griddle Plate
  • 1 Temperature Probe
  • 1 Cutting Board
  • 1 Knife
  • 55G Hickory Wood Pellets
  • 1 Wire Rack
  • 1 Tongs

Ingredients

  • 1 lb Chuck Steak See video on how to trim one out of a chuck roast.
  • 1 tablespoon Sea Salt
  • 1 tablespoon Black Pepper
  • 1 tablespoon Granulated Garlic
  • 1 tablespoon Granulated Onion
  • 3 tablespoon Beef Tallow

Instructions

  • Take your chuck steak or learn how to trim out one from a chuck roast by watching the video below.
  • Season the steak liberally with the salt, pepper, granulated garlic, and granulated onion. Put the steak into a refrigerator to keep it cold.
  • Place the griddle into the Ninja woodfire and put the wire rack on top of it. Load the ninja woodfire with pellets and set it to the Smoker setting and 200F or 93C.
  • Once the smoker comes up to temp and says add food put the temp probe in the steak and connect it to the Ninja if you are using a Ninja Woodfire Pro Connect XL. Place the steak in the Ninja Woodfire on top of the rack and close the grill.
  • Open the Ninja Woodfire Pro Connect APP and set the unit to a "Probe Cook" for beef rare, which is 120F or 49C.
  • When the app tells you that the steak has reached its target temp take it out of the grill and remove the wire rack. You can remove the probe at this time.
  • Turn the Woodfire off and then turn it back on and set it to the Grill HI setting without the Woodfire enabled.
  • Once the unit comes up to temp put the beef tallow on the grill and let it melt. Now sear the steak on all sides until you get a nice crust. This only takes a few minutes.
  • Once you get your desired crust take the steak off and set it out to rest for 10 minutes.
  • Slice thin across the grain and enjoy!

Notes

If you are not using a Ninja Woodfire then you can use any smoker you have. Just set it to 200F or 93C. If your smoker does not have a connected temp probe to monitor the temp then you can either use any wireless probe or just use a instant read thermometer to check the temp as it cooks.
When you get to the searing stage you can sear however you like and works with your grill/smoker. I would suggest using a cast iron pan with the beef tallow to achieve similar results to this recipe.
