Prep: In a large mixing bowl combine pumpkin, sugar, cinnamon, salt, ginger, and nutmeg. Lightly beat eggs into the pumpkin mixture. Add the evaporated milk, milk, and mix thoroughly.
Make Pie: Roll out your premade pie crust and place it into the pie pan. Pour mixture into the prepared pie pan.
Set up smoker: Set your Ninja Woodfire to bake making sure you hit the woodfire buttton. Set the temperature to 375F(191C).
Bake: Place your pie in the woodfire and cook for 30 minutes uncovered. After 30 minutes cover the pie with Aluminum Foil and bake for another 30 minutes. Time can vary wildly but you will know your pie is done when you can insert a butter knife in the center and it comes out clean.
Cool: Cool on a rack. When cool refrigerate overnight.
Enjoy: Top with Cool Whip if you want to do it the way my Mom did.
