Ingredients

Roasted Soy Sauce Style Sauce

  • 4 tablespoon Japanese Kewpie Mayonnaise
  • 2 tablespoon Oyster Sauce
  • 1 tablespoon Soy Sauce
  • 2 teaspoon Mirin
  • 1 teaspoon Sugar
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Black Pepper
  • Tiny Pinch Roasted Sesame Oil

Burgers

  • Prime Rib Beef Burgers From Sam's Club About 7 ounce patties of 80/20 beef
  • Toasted Sesame Seed Buns
  • Bacon 2 Pieces per patty.
  • Eggs 1 Egg per Burger
  • White Onion
  • Salt To Taste
  • Black Pepper To Taste

Instructions

Make the Sauce

  • Mix together the Japanese Kewpie mayonnaise, oyster sauce, soy sauce, mirin, sugar, garlic powder, black pepper, and a tiny pinch of roasted sesame oil until well combined.

Prepare the Smoked Burger

  • Season one thick prime rib beef burger with salt and black pepper, then place it on the smoker with the smoker set to 200F/93C. Smoke until the burger hits 120F/49C.

Prepare the Smash Patties

  • Divide the remaining beef into equal portions and form the smash burger balls. It works well with just about 3 ounce patties.
  • Refrigerate the smash burger balls while preparing the remaining ingredients.
  • Finely dice the white onion.

Prep the Grill/Flat Top

  • Set your grill to high and preheat the flat top.
  • Cook the bacon until crispy.
  • Rub the burger buns cut sides in the bacon grease and place them down to toast. Once they have a nice golden toast you can take them off.
  • Lightly cook the diced onion. You are just looking for a little color and a slight softening of the onions.
  • Fry the eggs until crispy.
  • Cook the smash burgers on the flat top. You smash hem down and let them cook until you see a crust building up on the outer edges. Flip them and cook the rest off the way on the other side. Top one patty with cheese and then stack it on top of the other.
  • Take the smoked patty after it reaches the desired temp and cook it on the flat top until you get a nice crust on it. Top it with cheese and let it melt.
  • Spread the sauce on both the bottom and top buns.

Assemble the Burger

  • Spread some sauce on the top and bottom of the buns.
  • Place the burger patties on the buns, top with the lightly cooked onions, add the fried egg. Add two pieces of crispy bacon. Drizzle on a little more sauce. Place the top bun on and serve.

Notes

  • This recipe makes two versions, a smoked thick burger and a double smash burger.
  • This version uses bacon instead of Canadian bacon.
  • A crispy fried egg is used instead of the folded McDonald's style egg.
  • The smoked thick burger was my favorite because it delivered a stronger beef flavor while letting the sauce and toppings still shine.
