Maple Bacon Coffee Rubbed Ribs

- Wood Pellets or Wood
- Pot
- Cutting Board
- Knife
Ingredients
- 1 Rack ST Louis or Spare Ribs
- 1 Cup Apple Cider Vinegar
RUB
- 3 tablespoon Maple Bacon Coffee
- 2 tablespoon Sea Salt
- 2 tablespoon Smoked Paprika
- 1 tablespoon Chilli Powder
- 2 tablespoon Light Brown Sugar
- 1 teaspoon Thyme
- ½ teaspoon Coriander
- 1 teaspoon Black Pepper
- 1 tablespoon Granulated Garlic
- 1 tablespoon Granulated Onion
- 2 teaspoon MSG
BBQ Sauce
- 1 Cup Coffee
- 1 Cup Ketchup
- ½ Cup Apple Cider Vinegar
- ¾ Cup Brown Sugar
- 2 tablespoon Molasses
- 2 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 tablespoon Granulated Garlic
- 1 tablespoon Granulated Onion
- 1 teaspoon Smoked Paprika
- ½ teaspoon Coriander
Instructions
- Preheat your smoker to 200F or 93C.
- Combine all of the rub ingredients in a shaker and mix well.
- Put a small pot or saucepan over medium heat and combine all of the ingredients for the BBQ sauce. Stir well and then simmer for 20-30 minutes until thickened and set it aside.
- Prep the ribs by trimming off any loose bits of meat and either removing or scarring the membrane on the back of the ribs.
- Sprinkle the rub all over the ribs liberally.
- When the smoker is ready add the ribs.
- Cook for 2 hours checking them every 30 minutes to 1 hour. If you see any dry areas spritz of brush them with apple cider vinegar.
- Remove from the smoker and wrap them in aluminum foil. Pour about ¼ cup apple cider vinegar and ¼ cup of the coffee BBQ sauce into the foil before you close it up.
- Bump up the temp on the smoker to 275 and cook for 1 hour. After the hour check the ribs, there should be good pull back on the bone, and the ribs should be floppy if you hold them.
- Set the Ninja Woodfire Grill to Air Crisp and 400F or 204C and let it preheat for 10 minutes. If you are using another kind of smoker just up the heat to 400F or 204C. While the Ninja is preheating brush the ribs with the coffee bbq sauce.
- Put the ribs on the Ninja Woodfire and cook for about 2 minutes. Just enough to set the BBQ sauce and make it look “tacky”. If using another smoker just cook them until the sauce sets and looks tacky, not too long.
- Let the ribs rest for 10 minutes and then slice and ENJOY!
