It may be the McDonalds of Italian food but Olive Garden makes one of the best soups ever! Zuppa Toscana is a creamy and hearty soup that Dad hacked to make in his Instant Pot. It is not the best Italian restaurant in the world, heck it may not even be real Italian food.
However, Dad has fond memories eating at Olive Garden with his family and the Zuppa Toscana was one of his favorite dishes there so he decided to make an instant pot Zuppa Toscana recipe!

? Prep
This is a really easy dish to make. All you need to do for prep is to chop up some potatoes and dice an onion.
? Brown
Now turn your instant pot to saute and add in the sausage & spices. You want sausage without the casing. You can either buy it that way or just remove them yourself.
⏲️ Cook
Now add in the onions and cook them until they turn a little translucent. Then throw in the potatoes, chicken broth, and season with salt and pepper to taste.
Put the lid on the instant pot, set it to sealing and cook it on manual for 5 minutes. When the cook cycle is done do a quick release and open the instant pot.
The next step is to add in the kale and let it wilt a little. This takes about 1-2 minutes. The final step is to add in the heavy cream and season with salt and pepper to taste and you are DONE!

Instant Pot Zuppa Toscana Recipe - Fast and Easy!
Equipment
- Instant Pot or Electric Pressure Cooker
- Knife
- Cutting Board
- Metal Spatula
Ingredients
- 1 lb Mild italian sausage Casing Removed
- 4 Russet potatoes Peel on and cubed
- 1 White onion Diced
- ½ lb Kale Washed
- 3 tablespoon Minced garlic
- 1 tablespoon Extra virgin olive oil
- 2 teaspoon Dried oregano
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 6 Cups Chicken broth
- 1 Cup Heavy cream
- Salt To taste
- Black pepper To taste
Instructions
- Wash and cut the potaoes into chunks and set them aside. Try to keep them even sized. Dice the onion and set it aside in a seperate container from the potatoes.
- Turn the instant pot on to Sauté More/High setting. Add the Olive oil and wait until the instant pot says hot. Then add in the sausage, garlic powder and onion powder. Cook stirring frequently until all of the sausage is browned. This takes about 3-5 minutes. Make sure you break up and crumble all of the sausage.
- Add in the garlic, onion and oregano. Cook while stirring frequently for 2-3 minutes or until the onions begin to turn translucent.
- Add in the potatoes and chicken broth. At this point add in your salt and pepper to taste.
- Put the lid on the instant pot and make sure the toggle is on sealing. Set the instant pot to the manual setting and select 5 minutes. When the cooking cycle is finished do a quick release and open the instant pot.
- Add in the kale and stir until it is wilted. This will take about 1-2 minutes. Add in the heavy cream while stirring for 1-2 minutes. Taste and adjust salt and pepper seasoning to taste and serve immediately.
