Dad's Instant Pot Pork Pot Pie recipe was born out of necessity. You see, Dad has to be a little creative sometimes and cook with what he has on hand. This day Dad had some pork chops, and boneless pork, canned veggies and Crescent Rolls. It sounded like the perfect start to a pot pie to him!
Most people think of chicken when it comes to pot pie, but pork works just as well! Using the crescent rolls for the crust is an easy hack to make this dish go together with little fuss.

Put the ingredients in the instant pot
The nice thing about this recipe is that you don't really need to do much. There is no need to saute the meat. Place the pork, spices and 1 cup of water in the instant pot. Dad did not even bother to mix the spices up and he just left them on top of the meat as you see in this picture. It made no difference in the taste of the dish. It was still flavorful and delicious. If you want to you can do the spices first and then pour the water over them to mix them up.
Cooking times for the pork
Since Dad was using frozen pork he did 20 minutes on the manual setting. If you are using fresh pork you can do 15 minutes. Make sure you do a Natural Release of 10 minutes when the pork is done cooking. This will help ensure that the pork stays tender.
Time to make the gravy for the pot pie
It would not be a pot pie unless you have gravy. The nice thing about cooking this in the instant pot is that the liquid produced in the cooking process makes the perfect base for your gravy.
Remove all of the pork from the instant pot and give it a good chop. Dad used his kitchen shears for this, you can use a knife or even shred it with forks if you like. Grab a thick potholder and take the inner pot out of the instant pot to allow you to pour all of the liquid into a separate bowl.
Return the inner bowl to the instant pot and set it to saute and the high or more setting. Add in the butter and cook until it begins to foam. Now add in the flour and whisk it while cooking for 2-3 minutes. That is enough time to just cook the flour. We are making a blonde roux here, so no need to cook it for too long.
Now add in the liquid you reserved in the separate bowl. Make sure you whisk it as it cooks. For Dad the amount of liquid and the roux made a pretty nice gravy. It seemed a little thin at first but as he simmered it thickened up nicely.
It's time for the veggies and pork
Drain your can of peas and carrots. Put the veggies in the gravy. Add in the chopped pork and give everything a nice stir. Now is the time to add in the heavy cream. This will help give it a rich flavor and make it nice and creamy.
At this point you need to taste the gravy to see if it needs any additional salt or pepper. Adjust the seasoning to your liking.
Pork Pot pie assemble!
Like the Avengers it is now time for our pot pie to assemble. Pour the pork mixture into an 8x8 baking pan. This was the perfect size pan for Dad's mixture. The last step is to put the crust on our pot pie.
Dad uses some ready-made Hawaiian style crescent rolls. It only took one can to top the whole pie. Dad had to do a little tearing and reassembly to make it work but it was not hard.
Bake until golden brown
The final step in Dad's Instant Pot Pork Pot Pie Recipe is to bake in a 350-degree oven until the top becomes nice and golden brown. It took about 20 minutes in Dad's oven. That is it! You now have delicious homemade pork pot pie that went together easy as pie, had to.
